Southwest Tomato Sauce for Vegans:
1.5 cups |
diced tomato |
1 cup |
diced onion |
1 Tb |
chopped garlic |
1 Tb |
chopped jalapeno pepper |
1 cup |
Water |
1 tsp |
sugar |
1/2 tsp |
salt |
1/4 tsp |
ground cumin |
1/8 tsp |
ground coriander |
1 Tb |
chopped cilantro |
2 Tb |
extra virgin olive oil |

1. In a small sauce pot add all ingredients except olive oil and cilantro.
2. Bring to simmer and cooked covered for about 12 minutes. Coarsely blend the sauce using a handblender or cuisinart to form a rough puree. Reheat sauce. Whisk in olive oil 'till completely absorbed. Add
hot cooked pasta, simmer one minute add cilantro and serve. |
